I came across the 21 Day Tummy Diet, while perusing the January edition of the Reader’s Digest Magazine and decided to give it a try.
Here is a collection of the recipes I have tried so far… I have made some changes to most of them from the original versions, replacing meat with vegetables and at times adding different spices or other ingredients.
Creamsicle Smoothie
Very Berry Smoothie (.6 oz non fat greek yogurt, 1/2 cup blueberries, 1/2 cup strawberries, 1 tsp almond butter, 2 tbsp chia seeds, 2 tbsp light coconut milk, 2 tbsp water, 1 tsp maple syrup (optional))
Caldo Verde (replaced meat with lentils)
Creamy Swiss Chard and Spinach Soup
Roasted Vegetable Soup (replaced parsnip with turnip, added juice of 1 tomato)
Stuffed Eggplant (replaced spices, replaced ground beef with peas and tomatoes)
Grape and Walnut Waldorf
Crunchy Chopped Salad with tangerines and peanuts with Asian Sesame dressing
Steamed Green Beans and Peppers (with salt, black pepper and lemon juice; sliced almond )
