1 medium onion chopped
1 medium tomato chopped
1 green chile cut
1 1/2 cups quinoa
1 tsp channa dal (split yellow pea)
1 tsp moong dal (split white pea)
cashews
a few curry leaves
1 tsp mustard seeds
a small piece of ginger finely chopped
1 small carrot cut into small pieces
salt to taste
In a medium pan add oil, cashews, channa dal, moong dal, mustard seeds and fry till lightly brown. Add onion, ginger and chile and continue frying until brown. Add tomato, salt and 3 cups water and continue to boil until the onion is cooked and turns transparent. Add the quinoa and cook on low flame until cooked and the water evaporates. Add a table spoon butter and leave for a few seconds.
Remove from flame and serve hot with some mango pickle. Delicious!
Fresh take on quinoa – got to try! I usually add it in when I want to cook rice.
