Quick Lunch Series: Spicy Whole Wheat Couscous Tabbouleh

Unfortunately, there are few places to eat in the vicinity of my office.  I am always looking for quick, and easy to make lunches.


Here is another recipe from my Quick Lunch Series you might enjoy!

1/4 cup whole wheat couscous
1/2 bunch parsley
1/8 cucumber chopped
1-2 tbsp chopped red onion
10-12 grape tomatoes sliced
a few pickled jalapeno peppers
a few capers (optional)
1 tbsp olive oil
1 tbsp lemon juice
a dash of curry powder
salt and fresh ground pepper to taste

tab2Cook couscous according to instructions.

Tab3Toss everything and refrigerate for a few hours. Enjoy for lunch on a hot summer day!

tab1Enjoy standalone, or with fresh whole wheat pita, falafel and hummus!
