Apricot and Cranberry Cake


Fresh cranberries are in abundance right now. And it is a tradition to make something cranberry related for Thanksgiving. Since I saw this cake, I have been wanting to try it. It seemed perfect dessert for the Thanksgiving holiday. Here’s how I made mine:

Ingredients:
1 cup black tea
1 cup sliced cranberries
1 cup chopped dry apricots
1 cup all purpose flour
1 cup sugar
2 large eggs
2 t baking powder
1 cup butter (approx 2 sticks)
1/2 chopped walnuts (optional)

Preheat oven to 350 degrees Fahrenheit.
Soak the cranberries and the apricots in the black tea until absorbed.
Meanwhile, whisk 1 cup butter with 1 cup sugar until stiff. Add 2 large eggs and continue whisking. Add 1 cup flour and 2 tsp baking soda.
Add the soaked apricot and cranberry with black tea. Add chopped walnuts and mix well.
Grease cake pan and pour in.
Bake for 35-40 minutes or until cooked. Slice and serve.
