Pumpkin Curry

If it’s October it’s gotta be Pumpkin!

1 small pumpkin (peeled and cut into small squares)
1 small onion chopped
1 small piece of  ginger chopped
3-4 garlic cloves chopped
1-2 red whole dried chillies
1 tsp cumin seeds
a pinch of red chilli powder
a pinch of cumin powder
1 tsp sugar
1 tsp coconut
1-2 tbsp milk
a few curry leaves
a pinch of turmeric
1 tbsp oil

In a pan, add oil, turmeric powder and fry cumin seeds and dry red chillies  till lightly brown. Add curry leaves, chopped onion, garlic and ginger and fry till lightly brown. Add pumpkin and some water and cook on low medium flame until the pumpkin softens. Add milk, sugar, coconut powder or shredded coconut, cumin and chilli powder and salt to taste. Leave for another 5 minutes and remove from flame. Serve hot with basmati rice or roti.
