Pearl Couscous Upma


2 cups pearl couscous
1 medium onion chopped
1-2 tomatoes chopped
1 carrot cut into small pieces
1 cup peas (frozen)
1 green chili or jalapeno cut into small pieces
a few curry leaves

1 tbsp yellow split peas (channa dal)
1 tbsp white gram  (Urad dal)
1 tsp mustard seeds
2-3 tbsp cashew
1-2 tbsp oil
1-2 tbsp ghee or butter

In a pan heat the oil and add the cashews (can also use peanuts), yellow split peas, white gram and mustard seeds and fry till lightly brown. Add the curry leaves and cut green  chili and fry for a few seconds. Add onion and fry till lightly brown. Add the carrot, peas and tomato and continue cooking for a few minutes. Add salt to taste and 6 cups water and cook on medium low till the vegetables are cooked.

Add two cups of pearl couscous, cover the pan and cook till all the water evaporates and the couscous is cooked. Add the ghee or butter and cook for a few more minutes, stirring as necessary.

Serve hot and enjoy with chutney!

Note: The seasoning is traditional South Indian Fare. The dish should still taste good without one or more of the items used in the seasoning!
